Over twenty years have flown by since I became the head chef of Hotel Minoya. Along with the rapid changing of the times, ‘cuisine’, the main feature of a ryokan, has also evolved to match the needs of the guests. The number of dishes and the splendor of appearance are often said to be the characteristics of food served at a ryokan-style hotel, however I often wonder about this claim. For a long time, my motto has been ‘Strive to provide delicious dishes’. I will keep on trying my best in a variety of ways so that we can continue to hear the guests say ‘That was delicious!’, and to make Hotel Minoya a comfortable place for our visitors. Hotel Minoya
